Summer Cocktails That Pair Perfectly with Caviar

There’s a reason caviar’s usual drinking partner is vodka or champagne - each enhances the others’ flavor and textural characters, taking nothing away; it is a beautifully symbiotic relationship. A bit more challenging is pairing cocktails (mixed drinks) with caviar. Not quite as obvious as burgers and a beer; grilled steak with a juicy red wine or a Pimm’s cup and Deviled Eggs, there are nuances to consider. Bringing the caviar and cocktail duo together requires some thought and begs the question: which to consider first, the caviar or the cocktail?

In an ice-filled, tall cocktail glass, add Pimm’s and lemon-lime soda. Top with splash of lemonade. Stir well and garnish with cucumber wheel.

If there’s already caviar on hand, and cocktails to plan, start by considering the caviar’s roe size and flavor profile - briny, salty, buttery, nutty, smoky -  to come up with a drink that plays well. Larger caviar eggs with a lush “pop,” are nicer on the palate with a neat spirit like Vodka or fine, dry champagne. Conversely, smaller, snappier roes, also divine with chilled neat vodka and/or champagne, can also handle something sturdier like a chilled Manzanilla sherry.

With a particularly bright, bold caviar, the cocktail should be soft, almost neutral, maybe a touch floral and possibly sparkling. If the caviar has a gentler taste and cushiony texture, amp up the flavors with a drink tinged by lemon, fresh herbs, flower water, and some lift - think Ramos Gin Fizz, a frothy, strongly shaken cocktail that has all the components for a great pairing - mellow gin, orange blossom water, egg white, half-and-half, lemon juice, lime juice and a smidge of simple syrup.

Ramos Gin Fizz

1/4 cup (2 ounces) gin

1 dash (3 to 4 drops) orange flower water

1 large egg white

1 tablespoon (1/2 ounce) half-and-half

1 tablespoon (1/2 ounce) fresh lemon juice

1 tablespoon (1/2 ounce) fresh lime juice

1 tablespoon (1/2 ounce) simple syrup

1 cup ice cubes

Splash of soda water


In large cocktail shaker, combine gin, orange flower water, egg white, half-and-half, lemon juice, lime juice, and simple syrup. Shake vigorously for 30 seconds. Add ice and shake for another 30 seconds more. Strain mixture into 8-ounce glass. Slowly pour soda water down inside edge of shaker to loosen remaining froth. Gently spoon soda water/froth mix onto drink and serve.

Weather dictates whether to go bold or not. Summer’s heat means keeping everything light and simple - it’s about finesse. Try coupling toast points spread with sweet butter and caviar with a fresh, bitter-sweet Aperol Spritz (Aperol, Champagne, Soda Water and a lemon twist). Or go to the opposite end of the spectrum with a seriously neutral chilled Junmai Daiginjo sake. Both work wonderfully, only depending on mood.

Splash of Soda water


Fill a large wine glass with ice. Pour first two ingredients over the ice, splash with soda water, stir gently, garnish with lemon peel and serve.

Have a cocktail in mind and want to bring caviar to the party? The same flavor notes and pairings hold true. Know the booze and keep in mind all the drink’s ingredients, including garnishes. A not-too-sweet Manhattan may pair perfectly with a small scoop of caviar on a plain water cracker, but that drink’s typical cherry garnish will not work well with caviar eaten straight or garnished by finely diced egg and onion.  

If a breezy afternoon means citrusy gin and tonics made with a floral gin like Hendrick’s, go for a caviar that’s slightly briny. A cocktail like an airy, creamy Ramos Gin Fizz can stand up to stronger caviar or the fattiness of smoked fish.  

Stick to or buck tradition when pairing summery cocktails with caviar - there’s almost no way to go wrong, though it’s best to avoid super sweet, highly acidic or milky cocktails that could distract from caviar’s delicate, yet pronounced flavor.  Most important, don’t overthink the matter, ‘tis the season to stay cool.

How to Store Caviar

Always serve the freshest caviar and prevent foodborne illness from bacteria by using the expert storage methods of executive chefs and top purveyors.

Premium caviar is extremely perishable, so only purchase as much as you need. Typically sold in vacuum-sealed containers, premium caviar lasts 2-4 weeks unopened. After it's been opened, it lasts three days. Keep in mind that air creates the perfect environment for dangerous bacteria to grow, which makes it imperative to keep it refrigerated before serving. Caviar only keeps for two hours unrefrigerated and one hour if the serving area temperature is 90 F or above. 

There are two methods of caviar processing.  Premium caviars are processed using a traditional method of “malassol”, which means lightly salted.  An alternative method is heat processing through pasteurization which does affect the taste & quality.

Caviar lasts six months to a year on the shelf and doesn't need to be refrigerated until time to chill for serving. Once opened, use the same rules as fresh caviar and place the sealed container on an ice pack in the bottom corner of the fridge. Use within three days or discard to avoid consuming dangerous bacteria. 

Store caviar in the bottom back of your fridge to keep it fresh. Because heat rises, this is the coldest part of the refrigerator, making it an ideal spot for your collection of the finest imported or domestic roes. Keep the fridge temperature at a cool 28-32 F. Most fridges don’t reach this temperature, which makes it necessary to place an ice pack on top of the caviar jar and replenish as needed. If the caviar tin is opened, smooth the surface with a sheet of plastic wrap and press directly onto the surface before sealing the jar and placing it in the refrigerator. Doing this helps minimize the caviar's exposure to air. Turn the jar over every day to so that the oil distributes evenly among the fish eggs. 

Typically used as a garnish or spread, caviar should never be opened until needed. It should also be taken out of the refrigerator 10 minutes before serving. If the caviar is going to be served buffet style, keep it in the original container over a bowl of crushed ice. This will keep it fresh and also give your dinner guests a chance to read the label and learn more about the caviar and its origins.

Caviar is one of the rarest and expensive foods on earth and also the most perishable. Always plan ahead and carefully calculate the servings of your small plates or dinner entrées to ensure the freshest and most delicious caviar.

        Smoked Fish and Caviar Salad

        Yield: 6 servings

        Total Time: 20 minutes 



        6 ounces crème fraiche 

        1 teaspoon finely chopped dill

        1 teaspoon fresh lemon juice

         Kosher salt and freshly ground black pepper

        2 teaspoons grated horseradish

        1 teaspoon Dijon mustard

        1 tablespoon diced chives

        Two teaspoons grated lemon zest

        Pinch of cayenne

        12 slices of smoked salmon or other cold smoked fish such as rainbow trout, about 6 ounces

        6 thinly sliced radishes

        Small bunch watercress

        Six lemon wedges

        Coarse sea salt for sprinkling

        4 ounces Beluga caviar, about 6 tablespoons. 


        1. In a small bowl, whisk together the crème fraiche, horseradish, lemon juice, lemon zest, cayenne, and a little salt and pepper to taste. If needed, add a few more drops of lemon juice or cold water to thin the sauce. 
        2. On six chilled salad plates, spread 2 tablespoons of sauce in the center of each. Top with two slices of smoked salmon and garnish each plate with sliced endive and radishes. Add a few watercress sprigs, a sprinkling of chives, and a lemon wedge. Sprinkle with coarse sea salt to taste. To complete the dish, spoon 1 tablespoon of caviar in the center of each salad. Squeeze lemon juice over the salad for a bright, floral finish. 


        Endive Spears with Smoked Salmon, Horseradish Cream, and Dill 

        Yield: 24 servings



        6 ounces crème fraiche 

        2 1/2 tablespoons drained capers

        2 1/2 tablespoons chopped fresh dill and several sprigs for garnish

        3 1/2 teaspoons fresh lemon juice

        2 1/2 teaspoons finely grated lemon zest

        2 1/2 teaspoons horseradish

        24 endive spears

        Minced red onion

        4 ounces smoked salmon

        2 tablespoons thinly slice radishes for garnish.




        1. In a small bowl, mix crème fraiche with capers, chopped dill, horseradish, lemon juice, and lemon zest. Season with salt and pepper.
        2. Top each pointed end of the spear with 1 teaspoon of the tangy, zesty horseradish mixture and sprinkle with onion.
        3. Cut the salmon into 1-inch pieces and drape over the horseradish. Place on small plates or a large tray and artfully arrange the spears in the shape of a flower. Garnish with dill sprigs and radishes. Cover and chill before serving. This dish can be made 2 hours ahead. 

        A platter of sumptuous delicacies from the sea is like a cool breeze on the hottest day of summer, especially smoked fish paired with caviar and seasonal garnishes.

        Caviar wasn’t always considered a delicacy.

        In 1280, caviar was formally sanctioned by the Russian Orthodox Church as a food that could be consumed during religious fasts. This is during a time when the Church strictly governed the most minute aspects of all Russian life.

        Back in the days of old, Russia was once the main producer of caviar, the icon of aristocratic elegance. Beginning in the 16th century, Russian caviar was harvested from wild caught sturgeon from the Caspian and Black seas, a tradition that eventually gave way to more sustainable aqua culture practices.

        After a series of export sanctions and restrictive quotas were levied in the early and mid-2000's, Russian caviar no longer dominates the global caviar industry. CITES temporarily banned imports on caviar from the Caspian and Black seas in 2006.  As a result, today, it's now likely that caviar from Russia is either fake or illegal. 

        Due to closely monitored fishing restrictions and import sanctions, Russian caviar for sale is a thing of the past for most caviar lovers, especially now that superior quality roe is available from sustainable fish farms around the world. In fact, many chefs prefer farm raised sturgeon roe to Russian caviar because of its comparable taste to the finest sevruga and osetra caviars. These farms offer consistent, high grade caviars that do not come with the potential risk of a retroactive CITES violation.  As a result of overfishing, you can get high quality, reasonably priced, variety specific caviars from all over.

        If you buy Russian caviar online, there are a few simple ways to ensure its authenticity and quality. First, make sure the container is vacuum-sealed. When you open the jar, there shouldn't be a layer of water or oil, which is a likely indicator of fake or substitute grade fish roe.

        The rarest and most expensive caviar comes from the beluga sturgeon, a native species of the Caspian Sea. Known for its soft texture and large pea-sized eggs, with color ranges from pale silver to black.  If you buy Russian caviar, another premium roe to try is osetra, which has a savory, buttery flavor with hints of fresh ocean air. Chefs also prefer this variety for its firm texture and medium sized tapioca pearls with a light brown to rich dark color. 

        When the import ban on Russian caviar was partly lifted in 2008, Russia exported 3 tons of beluga, 17 tons of sevruga and 27 tons of osetra, which still falls 15% below the official quota. This international development combined with overfishing and destruction of spawning habitat has ushered in a new era of caviar production using sustainable aquaculture practices. If you buy Russian caviar online, expect a high price point compared to the more environmentally conscious alternative of farm-raised roe from other countries.
