




The product of a Russian Diamond sturgeon mated with a Siberian sturgeon is a new class of sturgeon hybrids that are bred to deliver the best roe possible. Hybrid sturgeons like this variety can offer faster maturation than “purebred” sturgeon species, allowing for a quicker caviar production, while also retaining the prized flavor profiles of the most desirable sturgeon caviars, such as those native to the Caspian Sea.
Our Osetra Platinum caviar resembles a typical Osetra, with mid-sized silver-platinum hued pearls. The flavor also evokes a true Osetra, with a distinctly nutty flavor accented by a mild saltiness— an indulgent experience anytime.
Khavyar’s Osetra Platinum caviar is sourced from sustainably raised Acipenser gueldenstaedtii-baerii hybrids in Belgium.
