These lake whitefish are plentiful in North American freshwater habitats, and can be found in all five of the Great Lakes, allowing them to be responsibly fished without negative environmental impact.
It is advisable to gently rinse golden whitefish caviar before serving to prevent any transfer of color. Using a fine strainer, gently rinse the caviar pearls with cold water. Allow to drain, shaking the strainer slightly, before turning the contents out onto some folded paper towels. Gently pat dry. As each pearl is delicate, be sure to avoid using pressure that could damage the roe.
